The fruit that we eat today is not natural. And this is what I mean when I say that. So most modern fruit like apples that we eat today, they didn't exist 100 years ago. This Gala apple in the top graph has been selectively bred by humans to be much sweeter than ancestral varieties. So the Gala apple was actually created in the 1930s in New Zealand um by an orchidist uh by crossing two different kinds of existing apples. And it's been made and bred to be a very uniform color with a bunch of crunch, a long shelf life and also high sugar content. Now bottom graph, this is a Canada grease apple which is the closest thing that we have to ancestral varieties. Uh and this actually happens uh this breed of apples happen to be cultivated in France and they contain less sugar, more acidity and higher levels of polyphenols uh which are compounds that can influence how we absorb the sugar from the apple. And as you can see, it creates a much smaller glucose spike. And this variety is closer to the way that nature intended apples to be like. So the question is not is fruit healthy? It's always fine to eat apples and any whole fruit. The question is what kind of fruit are we eating today? And how different is it from what our metabolism, our body evolved to deal with? That's the question, my dears.
