Hey, friendly PSA. Pickled onions are one of the best foods you can store in your fridge. And the one-word reason why is contrast. And specifically, there are four types of contrast you'll get almost instantly. And first is visual. I mean, just look at them. That bright electric pink color doesn't really look like any other foods out there. So, it's going to pop against brown or bee dishes and instantly signals to your brain, this is about to be interesting. Now, the second type of contrast is taste. Pickled onions are sour, which is one of the five core tastes, and sour foods make our mouths water and are incredible at cutting through rich or fatty dishes. So, each bite with the onions is going to help add freshness, reset your pallet, and make every bite hit just a little bit harder. Now, third, we have texture. Pickled onions keep this light, crisp crunch, which is just enough to help break up softer foods and make each of those bite feel a bit more dynamic from a textural standpoint. And finally, we have a simple one that is often forgotten, which is temperature contrast. Think of kleslaw on a pulled pork sandwich or sour cream on your chili. Cold elements against hot food add a surprising amount of interest, and pickled onions do the same thing straight from the fridge.
