For my next dish, I have a very unusual dish. It's actually a tart thing made with onion that's been roasted and it's got black vinegar on it and it is sitting on top of a masa uh tortilla. Masa being corn, corn having ferulic acid, which is endothelial healing, so it actually helps blood vessels. Good for your circulation. The onion actually has um quercetin and quercetin is anti-inflammatory, making onions really very helpful. And then the black vinegar, not only it gives us this really beautiful color, but black vinegar actually activates your brown fat to burn down harmful white fat or visceral fat, so it actually activates your metabolism. And then on top is some caviar, so take the center of the dish that um uh actually have omega-3 fatty acids, good for heart health, good for brain health, not too much of it. And what I was told is that I should spread the caviar. Let me show you that. And then cut into it. So it's got corn, it's got onion, got vinegar. Uh it's in a vegetable demi-glace, so this is really a concentrated reduction. I'm going to spread the caviar over this. I don't eat caviar very often, but you get a chance to enjoy it. I always like to explore things and I'm going to cut into it. All right. It's a tart. So it's kind of like a into segments. Let's try this thing. Damn. Let me taste it. Put the caviar Mhm. The core corn um masa shell delicious um uh it's um very vegetable forward The onion is delicious. Not very strong. Very uh subtle. And you can definitely taste the black vinegar. Also not tart at all. Very smooth. Almost smoky. Uh and the caviar is not very fishy. Doesn't really impart its head. Almost a perfect blend of the ingredients. Horseradish and omega-3 fatty acids, ferulic acid. Um and this is a basically um vegetarian. Thumbs up.
