The water on the bottom of the droplet hits the hot pan and boils. So, it turns into a gas very fast, creating a cushion. It makes this protective layer of steam that protects the rest of the liquid water droplet from touching the pan. The droplet is levitating. It's hovering. It's like the droplet has a jetpack. I never realized this. This is just like a rocket. The little droplet is shooting steam off the bottom. Just enough force to oppose the force of gravity. So, it just hovers. But it's like a hovercraft. The light and frost effect is this. Usually when you drop water on a hot surface, it sizzles away as it boils off very quickly. But once you get the pan really hot over the light and frost temperature of water, something unusual happens. So because the droplet is not actually touching the surface of the pan, it has weird behaviors like beating up as if it's sitting on a hydrophobic surface. And you can see from this droplet, this is my favorite clip. We got something that you don't usually notice with the lead and frost effect, which is that the droplet is bouncing around here. This droplet is sitting on a hot plate with grooves and the grooves are sending ripples into the droplets. So, you get these really cool surface wave patterns. The light and frost effect is a phenomenon I was first introduced to in this other insane video of water walking uphill. And it's the same reason that the man in this viral video dipping his hand into molten metal still has a hand. The way the light and fresh effect protects your hand from molten metal. You touch a hot metal with wet hands, the water will boil so fast it'll create a protective vapor layer and that'll keep your hands from direct contact with the hot metal.
