If you like peaches, salmon, coffee, even chocolate, I have some not so great news for you. They're all in danger. In 2023, a single extreme weather event wiped out 95% of Georgia's peach crop. Salmon depends on cold rivers, but those rivers are getting warmer and less full, making it harder for them to breed and migrate. Chocolate grows in dry, hot, fragile climates. And as temperatures warm, we're noticing those prices have already increased 50% as crops dwindle and temperature increases. Coffees, the most important growing regions in the world, are becoming less reliable as temperatures increase and may put 75 of the 124 varieties of coffee at risk of extinction. Sadly, this is all happening right now. But culinary entrepreneur and former White House chef Sam Cass host dinners he calls the last supper to highlight how some foods just like these are becoming harder to grow. He shares what's at stake for future generations and what we can do now before it's too late. But before you get too depressed that you may never drink coffee again, there is some good news. Farmers, scientists, technologists from around the world are already working to build a more resilient food system where we make our soil more nutritious using less fertilizers and pesticides, but also less water and land and helping to make sure that our ecosystems are more resilient overall. If you want to save these foods you love, it's up to you and me. Advocate for more of these practices before it's too late. So, don't forget the chocolate needs you.
