Zero-Waste Chef

Concerned with the planet’s plastic pollution problem, I went plastic-free in 2011. Zero-waste was the next logical step. I’m not a huge consumer, so before my transition, I generated most of my trash in the kitchen. I find a use for every little scrap of food, I ferment all the things and bake lots of sourdough.
